Tea and scones have gone hand in hand for centuries. In  fact, scones are a key player in classic High Teas across the western world. Scones are mild-flavored but substantial pastries often laced with a variety of fruit or spices. Our delicious Sage Lavender Cherry scones provide an excellent balance of sweet and savory notes and offer a perfect counterpoint to your favorite loose leaf tea! 

Sage Lavender Cherry Scones

Ingredients:

  • 1 cup cold whole milk
  • 3 tablespoons Sage Lavender Guayusa*
  • 1/2 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup cold butter, divided
  • 1 cup fresh cherries, halved (1/2 cup dried cherries)

Directions: 

  • Combine milk and tea leaves and let steep for up to an hour in the refrigerator 
  • Preheat oven to 375°F/191°C
  • Strain Sage Lavender infusion and whisk in sugar until dissolved 
  • In a large bowl, mix flour and baking powder evenly
  • Divide 10 tablespoons of cold butter into cubes and blend into flour mixture using your fingers or a pastry cutter. Once the butter breaks down into pea-sized pieces, stop blending
  • Add sage lavender milk to bowl and stir with a fork until dough begins to clump
  • Knead gently to combine and transfer dough to a floured surface
  • Using a rolling pin, roll dough into a 14x8" rectangle and turn so the long edge faces you
  • Soften remaining butter in microwave and spread evenly over rectangle 
  • Sprinkle cherries over dough and gently press into place
  • Fold up bottom third of the rectangle over the middle and then fold down top third to meet the bottom. Fold in half the opposite direction and flatten into an 8x4" rectangle using a rolling pin
  • Divide dough into 8 even squares and place 2 inches apart on a prepared baking sheet
  • Bake until scones are golden-brown, 27-30 minutes
  • Enjoy!
